个人简介
陈海,男,西南大学食品科学学院副教授,中国科协“青年托举人才”,重庆市科技特派员,重庆市农产品加工协会技术专家委员会专家,Foods期刊客座编辑,《食品研究与开发》青年编委,《化学科学与工程》期刊编委,重庆市钱江食品(集团)有限公司专家顾问。主持中国科协“青年人才托举工程”项目、国家自然科学基金青年基金、重庆市自然科学基金面上基金等项目,已经在Chemical Engineering Journal、Biotechnology Advances、Food Chemistry、Food Hydrocolloids、Journal of Colloid and Interface Science、Trends in Food Science and Technology等高水平期刊上发表论文60余篇。担任Critical Reviews in Food Science and Nutrition、Food hydrocolloids、Food Chemistry等期刊审稿专家。

(2)研究课题
主要从事肉制品加工、食品副产物综合利用、食物大分子结构设计及营养因子创制应用研究,主持中国科协“青年人才托举工程”项目、国家自然科学基金青年基金、重庆市自然科学基金面上基金、天津科技大学省部共建食品营养与安全国家重点实验室开放课题等项目。协助企业完成动物皮等副产物综合利用与产品开发、肉制品发酵工艺优化及健康化升级,完成holoferritin的半生物合成及功能特性研究、乳化型holoferritin富铁功能因子创制及理论研究、蛋白结构理性设计及营养因子构建等研究。
